Yummy Pecan Shortbread Cookies

14 Tbsp (1 3/4 stick) unsalted butter, room
temperature
1/2 cup confectioners sugar, plus more for
dusting
1 tsp pure vanilla extract
2 cups all-purpose flour
1/4 tsp salt
2 cups (8 oz) coarsely chopped pecans

Line a baking sheet with parchment paper and set aside
Blend butter and sugar in bowl of electric mixer fitted with the paddle attachment until soft and creamy. Add vanilla and 1 Tbsp ice water; mix to combine
Mix flour and salt; slowly add to butter mixture; stir to combine; stir in nuts. Cover with plastic; chill at least one hour.
Heat oven to 325 degrees. Form dough into about 1 1/2-inch balls, and arrange on baking sheet several inches apart. Using fingers or the palms of your hands, press balls to flatten. Bake until bottom of cookies are slightly brown, 20-25 minutes. Let the cookies cool before dusting with sugar.
