White Bean and Sausage Soup

1.5 lb seasoned sausage (remove casings
before cooking)
1 onion, chopped
2 garlic cloves, minced
1 can diced tomatoes
1.5 cup beef or chicken broth
1 can cannelloni beans, drained and rinsed
1 Tbsp fresh basil
Parmesan cheese, grated
whole basil leaves

In a Dutch oven, cook sausage. Break the sausage up. Add onion and garlic. Cook about 8 minutes, stirring often.
Add tomatoes and broth. Simmer about 10 minutes.
Stir in cannelloni beans; simmer 2 minutes.
Stir in fresh basil. Garnish with Parmesan and whole basil leaves.

This is an easy main course soup that is even better the next day. Recipe makes a small batch suitable for 2-4 people.
