Tomato-Cucumber Salad

Serves 4

3 tablespoons balsamic vinegar
1/2 =A0teaspoon Italian herb seasoning
1/4 =A0teaspoon sugar
1/4 teaspoon salt
1/4 teaspoon freshly-ground black pepper
2 tomatoes thinly sliced
1 cucumber peeled and thinly sliced
4 scallions sliced

In a small jar with a tight-fitting lid or in a small bowl,combine the
vinegar, Italian seasoning, sugar,salt and pepper; cover and shake well
or whisk until blended. On a medium platter, arrange the tomatoes and
cucumber in a spiral, alternating the vegetables. Sprinkle with the
scallions and drizzle with the dressing.
