Sauteed Chicken with Fresh Herbs and Ginger

Category: Recipes

Chicken:

A. 2 Tbs. veg. oil
A. 16oz. chicken breasts (about 4 breasts)
A. Kosher salt and coarse ground black pepper

Herb Sauce:

B. 1 Tbs. lime juice
B. 3 Tbs. low-sodium chicken broth
B. 2 tsp. ginger, finely grated
B. 1/4 C.(packed) fresh basil, snipped
B. 2 Tbs.(packed) fresh mint, torn


Heat oil in saute pan over mediun-high heat. Season both sides of chicken breast with salt and pepper. Cook chicken in saute pan about 5 min. each side until cooked through. Transfer chicken to a plate. Add the lime juice to the pan and scrape up any browned bits that stuck to the pan with a wooden spoon. Add the chicken broth and ginger. Add the mint and basil and remove from heat. Stir to combine all. Spoon the herb sauce over the chicken and serve.
