Chicken Lettuce Wraps

A. 2 tsp. olive oil
A. 8 oz. chicken breast, thinly sliced
A. 2 Tbs. fresh ginger, peeled and grated
B. 2 Tbs. teriyaki sauce
B. 2 Tbs. rice vinegar
B. 1 Tbs. honey
B. 1/2-1 tsp. crushed red pepper
B. 1/2 tsp. cornstarch
C. 1 1/2 C carrot, grated
C. 1 C fresh bean sprouts (optional)
C. 1 C. snow peas, trimmed and julienned
C. 1/2 C. scallions, chopped
D. 1/4 C. toasted sliced almonds
D. 1 head of Bibb lettuce
Directions:
Heat oil over med-high heat in a wok or lg. saute pan. Add remaining A. ingredients and saute 5 min. until chicken is done. Whisk together all B. ingredients and add to chicken in pan. Stir in all C. ingredients and cook for about 3 min. until sauce thickens. Remove from heat and stir in almonds. Spoon about 1/4 C into lettuce leaf and roll up.
Serves 4
Note: I usually make a double batch of the sauce (B. ingredients) and serve on the side for dipping. If you decide not to use the bean sprouts, I suggest compensating by adding more carrots and snow peas.
