Cucumber Mango Salsa

A. 1 lg. mango, diced
A. 1 C cucumber, seeded and diced
A. 1/2 C red bell pepper, diced
A. 1 jalapeno, seeded and miced (or about 2 tsp. of canned diced jalapeno's)
A. 1 scallion, chopped
A. 2 Tbs. lime juice
A. pinch of ground red cayanne pepper

B. 1/2 tsp. grated lime zest
B. 2 Tbs. cilantro, chopped
B. 1/2 tsp. kosher salt or sea salt

Mix together all A. ingredients. Add B. ingredients and mix well.

Serving suggestions: This recipe originally came from a chicken recipe which is as follows...

Heat a nonstick skillet over medium heat. Place chicken in a shallow dish and sprinkle with 1 tsp. of salt, then with 2 tsp. of lime zest and 2 Tbs. of cilantro. Press to make the lime zest and cilantro adhere. Add olive oil to skillet; add chicken and cook, turning occasionally, until juices run clear, about 12 min.


4 servings. Each serving: 236 cal., 5g fat, 35g protein, 11g carb.

This is also great by itself with lime chips.
