Catalina Pot Roast

2 lb. beef chuck roast
1/2 t. each, salt and pepper
8 oz. Catalina Dressing
3 T. olive oil
2 large onions, sliced
2 lb. Yukon Gold potatoes, cut into 1 inch cubes
1 lb. carrots, sliced

Season roast with salt and pepper and brown in 1/4 c. dressing and oil over high heat. Watch carefully as this burns Add onions and stir until browned. Add veggies and enough water to fill pot 3/4. (1 1/2 - 2 cups). Bring to boil, cover and reduce to simmer and cook at least 2 hours. I used bottom round roast and cooked for 4 - 5 hours.
Serves 8.
Made 8-23-08. Best pot roast yet!!
