Brad's Succatash

2 c. fresh or frozen baby lima beans
2 T. butter
1 med. onion, diced
1 red bell pepper, diced
2c. fresh or frozen corn
1/2 c. heavy cream
1/4 t. dried thyme
kosher salt, pepper
Cayenne pepper flakes or Tabasco to taste
2 T. fresh parsley, chopped
Cook limas according to package directions. If using fresh, cover with salted water, bring to boil, reduce heat and simmer 12-15 minutes until just tender. Drain
In large skillet, melt butter and sauce onion and red pepper until just soft. Add limas and corn and mix.
Add cream, thyme, salt, pepper and Tabasco or red pepper flakes. Heat thoroughly. Sprinkle with fresh parsley.
