Carol's Chicken Capri

1c. Cottage Cheese
4 T. fresh oregano
1/2 t. fresh ground pepper
2 bone in, skin on chicken breast
1 T. garlic powder
2 T. olive oil
1 c. crushed tomatoes
1/2 c. sun-dried tomatoe pesto
2 c. shredded mozzarella

In blender, combine cottage cheese and oregano and process until smooth.

Rub chicken with garlic powder and cook in skillet with hot oil 12 minutes over medium high heat. Place in large casserole dish.

Place a scoop of cottage cheese, oregano mix in chicken breast cavity and top with mix of crushed tomatoes and pesto mixed together.

Bake 350 degreees for 30 minutes and then top with mozzarella cheese and bake another 15 minutes until hot and bubbly.
