Baked Chicken Monterey

1/4 c. flour
1 envelope taco seasoning mix
6 chicken breast halves
1/4 c. butter
1/4 c. tortilla chips (I used Ritz Crackers)
2 T. onion, chopped (I used shallots)
1 T. butter
2 T. flour
salt and pepper
13 oz. can evaporated milk
1/4 t. Tabasco
1 c. monterey jack cheese
1 t. lemon juice

Combine 1/4 c. flour and taco seasoning mix in plastic bag. Add chicken and toss to coat. Melt butter in 13 x 9 baking dish. Place chicken in butter and coat both sides. Roll in crushed tortilla chips and return to pan. Bake 375 degrees for 45 minutes. Serve with cheese sauce and more tortilla chips. Garnish with lettuce and tomato wedges if desired.

CHEESE SAUCE
Cook onion in butter until tender. Blend in 2 T. flour and salt. Add milk and Tabasco and stir constantly until thick and bubbly. Add cheese and lemon juice and heat until cheese melts. Sauce gets real thick. I added a can of Rotel to lighten it up and thin it out.
