Herb Paste
1/2 c. cilantro
3 garlic cloves, chopped
3 scallions, chopped
1 jalapeno, chopped
1/2 t. cumin
Pulse in food processor until finely chopped
Add 1/4 c. oil and process 15 seconds
Whisk in 1 T. lime juice and set aside.

Steak
1 1/2 lb flank steak, cut with the grain, into 4 equal pieces
1 T. salt
1/2 t. sugar
1/2 t. pepper
2 T. oil
Pierce steak with fork to allow herb paste to penetrate. Salt steak and spread with 2 T. herb paste, let stand 30 - 60 minutes. Scrape paste off steak and season with sugar and pepper. Sear steak in smoking fry pan 3 minutes, then turn and brown on remaining sides. Let rest 15 minutes. Cut steak cross wise into 1/8" pieces. Toss with remaining herb paste. Serve in warm tortilla shells and serve with fresh cilantro, onion, lime wedges...or maybe chopped tomatoes, cheese, etc.
