2 T. soy sauce
1 T. dry sherry
1 t. sugar
1/2 t. cornstarch
1/4 t. white pepper
1/4 t. red pepper flakes
1/4 t. dry mustard
2 T. water
2 T. oil
1 lb. green beans, cut into 2 inch pieces
1/4 c. ground pork (Substitute 4 oz. shitake mushrooms and add 1 T.oil to pan)
3 garlic cloves, minced
1 T. fresh ginger, minced
3 scallions, sliced
1 t. sesame oil
Mix first 8 ingredients together until sugar dissolves.
Cook beans in oil over smoking hot heat until crisp tender and skins are shriveled and blackened, 5 - 8 minutes; reduce heat as needed. Remove from skillet.
Reduce heat to medium and add pork and cook 2 minutes until no longer pink. (If using mushrooms, add oil and proceed.)
Add garlic and ginger and cook 20 seconds. Stir sauce to recombine and return beans to pan with sauce in step 1. Heat 20 seconds and serve with scallions and sesame oil.
