Turkey Breast with Sweet and Sauerkraut Dressing

4 - 7 lb. turkey breast,thawed
3 T. oil
salt and pepper
2 lbs. sauerkraut, rinsed
1 shallot, minced
1 c. carrots, chopped
2 tart apples, chopped (Granny Smith, etc.)
2/3 c. sweetended dried cranberries
14 oz. chicken broth
Heat oven to 350 degrees. Rub turkey with oil and salt and pepper. Place in medium roasting pan. Mix sauerkraut, shallot, carrots, apples and cranberries and spread around turkey. Pour broth over top and bake uncovered for 1 hr. and 45 minutes or until internal temperature reaches 170 degrees. Baste occasionally. Remove from oven and tent for 10 minutes.
I used chicken parts and turned out delicious. Made on 12/9/07
