Bayou Gumbo

3 T. oil
3 T. flour
1/2 lb. smoked pork sausage, cut into 1/2" pieces
2 c. frozen cut okra
1 onion, chopped
2 garlic cloves, chopped
1 green bell pepper, chopped
1/4 t. cayenne
salt and pepper
1 14 oz. can diced tomatoes, undrained
1 12 oz. pkg shrimp

Heat oil in skillet. Stir in flour and cook 5 minutes , stirring constantly. Reduce to med heat and cook 10 more minutes until mix turns reddish brown. Put mix in slow cooker and stir in remaining ingredients except shrimp. Cover and cook 8 hrs. Stir shrimp into gumbo and cook on low for 20 minutes. Serve with long grain wild rice.
Serves 6
