Glazed Peach Jalapeno Pepper Chicken

6 boneless skinless chicken thighs
1/4 t. salt
2 garlic cloves, chopped
2 - 3 jalapeno peppers, seeded and chopped
2 dark orange sweet potatoes, cut in 1 inch pieces
1 1/2 c. frozen whole onions
2 T. water
2 T. cornstarch
1/4 t. salt
3/4 c. peach preserves
1 1/2 c. frozen snap pea pods, thawed
Place chicken in slow cooker and sprinkle with salt. Top with garlic, jalapenos, sweet potatoes and onion. Cover and cook 7 to 8 hours. Remove chicken and veggies from cooker. Mix water, salt and cornstarch together. Pour juices from slow cooker into 2 quart saucepan. Stir in preserves and cornstarch mix and boil for 1 minute. Stir in pea pods and cook 2 minutes until pods are tender. Serve sauce over chicken.
