Vidalia Onion Souffle

2 T. butter
5 Vidalia onions, chopped
2 c. fresh bread crumbs (10 slices)
12 oz. can evaporated milk
3 lg. eggs, lightly beaten
1 1/4 c. parmesan cheese, shredded
1 t. salt

Saute onions in butter in skillet until el dente. Place onions and breadcrumbs in large bowl. Stir in milk, eggs, 1 c. cheese and salt. Pour into greased 2 qt. baking dish. Sprinkle with remaining 1/4 c. cheese. Bake at 350 degrees for 25 minutes.
