Chicken Fried Steak

4 4 oz. cube steaks
1/4 t. each, salt and pepper
38 saltine crackers, crushed
1 1/4 c. flour, divided
2 t. salt and pepper, divided
1 t. ground red pepper
1/2 t. baking powder
4 3/4 c. milk divided
2 lg eggs
1 c. peanut oil
Sprinkle steaks with 1/4 t. salt and pepper.
Combine crackers, 1 c flour 1 t. salt, 1/2 t. pepper, red pepper and baking powder.
Whisk together 3/4 c. milk and eggs.
Dredge steaks in cracker mix, dip in milk mix and dredge again in cracker mix.
Heat oil to 360 degrees in skillet (not non-stick). Fry 2 to 3 minutes on each side until golden. Remove and keep warm in oven.
Drain oil, preserving brown bits and 1 T. drippings. Whisk 4 c. milk, 1/4 c. flour, 1 t. salt and pepper and add to skillet, whisking constantly for 10 - 12 minutes until thick. Serve over steaks.
