Portuguese Cod in Cream Sauce

1 lb. cod
2 onions, slices
1/2 lb. potatoes, cubed
1 3/4 c. heavy cream
4 T. EVOO
3 T flour
3 T butter
s & p
3 T parmesan
mushrooms would be good too
Micro cod for 3 minutes and shred
Pre-cook onion and potatoes in butter and EVOO in large oven proof skillet
.
Add Cod and mushrooms.
In separate pan, make rue of 3T butter, flour and cream
Add Rue to pan and cook for 10 minutes.
Add Parmesan and put in 425 oven for 30 minutes or until browned and bubbly on top.
Cool for 10 minutes
