Mexican Pulled Pork

3 to 4 lb. pork, cut into 2 inch chunks
salt and pepper
1 t. cumin
1 onion, quartered
2 bay leaves
1 t. dried oregano
2 t. lime juice
2 c. water
1 orange, seeded and juiced

Combine pork, salt and pepper, cumin, onion, bay leaves, oregano, lime juice and water in large pot. Juice orange and add juice and spent orange rinds to pot. Liquid should just cover meat. Cover and bring to simmer.
Transfer to 300 degree oven and cook until meat is fork tender, about 2 hours. Remove pork from pot and pull each piece apart into 2 pieces. Reduce liquid to half, until thick and syrupy (1 cup) and remove solid pieces. Add liquid to pork and spread pork on wire rack set inside rimmed baking sheet. Place rack on lower rack and broil until meat is well browned and slightly crisp. Serve with tortillas and garnishes.
