Pulled Pork - Hangover Helper

3 lb. pork butt
salt and pepper
oil or lard
4 garlic cloves, sliced
1 onion, quartered
2 T. ancho chiles, ground
2 chipotle chilies in adobo, seeded, chopped
2 t. adobo sauce
1 T. cumin
1 T. coriander
3 bay leaves
2 to 3 qts. chicken stock
Heat oil in large pot and brown seasoned pork on all sides then remove pork from pot.
Saute onion and garlic, add pork back to pot.
Add chilies, cumin, coriander and bay leaves. Add chicken stock to cover pork.
Bring to simmer and place in 200 degree oven for 3 hours, until pork falls apart. Shred into 3 inch chunks.
In another pot, add oil or lard and fry pork until crisp. Serve with tortillas, lime, onions and cilantro.
