Sticky Spicy Baby Back Ribs

RIBS
2 T. brown sugar
1.5 t. salt
2 T. paprika, not hot
1.5 t. chipotle chili powder
1.5 t. ground cumin
1 t. ground allspice
1/2 t. pepper
2 2 lb. racks baby back ribs
Whisk spices together. Rub mix over ribs and wrap in double foil. Marinate at least 2.5 hours. Bring to room temperature for 30 minutes. Bake at 350 degrees for 1.25 hours.
SAUCE
1.5 c. onion, chopped
6 garlic cloves, minced
1.5 T. ginger, minced
2 T. oil
1/5 c. ketchup
1/2 c. cider vinegar
6 T. soy sauce
1/2 c. water
1/4 c. brown sugar
1/5 t. salt
3/4 t. pepper
Saute onion, garlic and ginger in oil in sauce pan. Add remaining ingredients and simmer, uncovered 15 minutes. Puree if desired. Keep warm.
GRILL RIBS
Grill on offset side of grill until tender and browned, about 30 minutes. Baste with sauce often. Remove from grill and let rest 5 minutes
