Garlic Studded Bone In Prime Rib

1 bone in prime rib
10 garlic cloves, peeled and sliced
1/2 c. oil
1/4 c. rosemary leaves, finely chopped
1/4 c. thyme leaves, finely chopped
1/2 c. Dijon mustard
Coarse salt
Black pepper
2 lb. shallots
2 lb. carrots
2 lg. celery
1 bottle red wine
2 qts. beef broth

Preheat oven to 300 degrees.
Insert garlic slices into slits in prime rib.
Mix oil, rosemary, thyme, mustard, salt and pepper and rub all over prime rib. Roughly chop veggies and place in large roasting pan to make a "rack". Place rib on veggies and roast 12 to 15 minutes per pound to internal temperature of 115 degrees for medium rare. Remove meat from pan and let rest 15 to 20 minutes. Add wine to roasting pan and cook over medium heat until almost dry. Add beef broth and reduce by half. Adjust seasonin and serve over prime rib.
