Herbed Egg and Sausage Tartlets

1 16 oz. pkg. phyllo dough
8 sausage patties
12 eggs
2 T. heavy cream
1/4 c. sun dried tomatoes, diced
1 T. chives, chopped
l T. parsley, chopped
1 T. tarragon, chopped
1.5 t. dry mustard
salt and pepper to taste
1 T. butter
1/4 cheddar cheese, shredded
Prepare 8 sets of 6 by 6 inch sheets of phyllo dough according to package directions. Press layered dough into 4 inch fluted tart pans. Trim excess. Bake at 350 degrees until golden. Cool 5 minutes. Place shells on serving plates.
Meanwhile, prepare sausage patties per instructions. Beat eggs, add cream and beat. Fold in tomatoes, chives, parsley, tarragon, mustard and salt and pepper.
Melt butter in frying pan and add egg mix. Scramble until firm. Fold in cheese and remove from heat.
Place sausage patties in tart shells and spoon egg mix over patties. Top with additional cheese and chives.
