Red Curry Thunder Thighs

8 skinless, boneless chicken thighs
salt and pepper
2 T. oil
1 onion, chopped
1 celery rib, chopped
1 red pepper, chopped
1 jalapeno pepper, seeded and minced
3 garlic cloves, minced
1 t. curry powder
2 T. stone ground mustard
1 t. dried oregano
2 T. fresh parsley
2 T. cilantro, chopped
1 c. white wine
1 c. tomato sauce
1 chicken bouillon cube
Fresh lime juice
Fresh cilantro

Season thighs with salt and pepper and brown on all sides. Remove from pan. Saute onion, celery and peppers until soft. Add garlic and saute for 1 minute. Stir in curry, mustard and oregano, then parsley and cilantro. Add wine, tomato sauce and bouillon. Return thighs to pan. Bring to boil and simmer 10 minutes. Cover and simmer for 5 more minutes.
