Gingered Pork Spareribs

2 T. oil
3 lbs. pork spareribs, cut into individual ribs
2 garlic cloves, minced
1 T. fresh ginger, minced
3/4 c. brown sugar
3/4 c. rice vinegar
1/2 c soy sauce
1 T. cornstarch dissolved in 1 T. cold water

Brown ribs in oil in saute pan. Transfer ribs to bowl, Add garlic and ginger and saute for 30 seconds. Add brown sugar, vinegar and soy sauce and stir to blend. Return ribs to pot. Cover and simmer over medium low heat until tender, about 45 minutes. If sauce is thin, gradually add cornstarch mix until slightly thickened. Serve over rice.
