Austrian Pork and Cabbage Stew

6 T. unsalted butter
1 large onion, cut into 1/4 inch slices
1.5 lb. boiling potatoes, cut into 1/4 inch thick slices
2 lbs. boneless pork shoulder, cut into 1.5 inch cubes
2 large carrots, thickly sliced
1/2 head Savoy cabbage cored and chopped
salt and pepper
3 t. ground caraway seeds
2 c. chicken broth
In large casserole, cook onion over mediun high heat in butter then remove from onion from casserole. Pour off extra butter and reserve.
Layer potatoes, pork, carrots and cabbage sprinkling each layer with salt and pepper and caraway. Pour reserved butter over top. Pour chicken broth over potatoes and cover tightly.
Bake 350 degrees until tender, about 2.5 hours.
Broil 3 to 4 minutes to brown top.
Serves 4
