Tarragon Chavrie Chicken with Mushrooms

4 chicken breasts, boneless, skinless
salt and pepper
2 T. oil
1 T. butter
2 c. shitake mushrooms, sliced
3 oz. shallots, minced
1 c. white wine
2 t. Dijon mustard
2 T. tarragon, chopped
1 5.3 oz Chavrie
1 7 oz. pkg Alouette Creme Fraiche

Season chicken with salt and pepper. Sear chicken in butter and oil 2 minutes on each side and remove from pan.
Add mushrooms and shallots and saute until tender. Add wine, mustard, Chavrie and Alouette Creme Fraiche to center of pan and stir until blended. Return chicken to pan and simmer 10 minutes. Place chicken on serving dish and add tarragon to sauce. Salt and pepper to taste. Top chicken with sauce.
