Roasted Garlic Bread with Gorgonzola Sauce

Garlic Oil:
1 lg head of garlic
1/2 c. Extra Virgin Olive Oil

Sauce:
1 c. heavy cream
1 c. crumbled Gorgonzola (4.5 oz.)
1 Baguette

Wrap garlic in foil and roast 45 min. at 450 degrees. Cool. Halve and place upside down. In a shallow bowl and pour oil over top. Let mix stand, covered and chilled for 3 days.

In saucepan, boil cream, stirring occasionally, until reduced to half. Add Gorgonzola and cook over low heat, stirring constantly until cheese melts and sauce is smooth. Remove from heat and cover to keep warm.

Horizontally halve baguette and arrange, cut sides up on baking sheet. Broil 2 to 3 inches from heat until golden. Brush with garlic oil and season with salt. Cut baguette into 1 inch thick slices and serve with sauce.
