45 Minute Roast Turkey

8 to 12 lb. turkey
10 garlic cloves and slightly crushed
1 branch fresh tarragon or thyme (or 1/2 t. dried)
1/3 c. olive oil or butter
salt and pepper
Heat oven to 450 degrees.
Put turkey on cutting board breast side down and cut out back bone. Turn turkey over and press to flatten. Put turkey in roasting pan, breast side up. Tuck garlic and tarragon under turkey and in nooks of wings and legs. Drizzle with olive oil and salt and pepper. Roast for 20 minutes undisturbed. Turkey should be browning. Remove and baste with pan juices and return to oven. Reduce heat to 400 degrees or 350 degrees if turkey browned to fast. Check turkey temperature every 15 minutes until internal thigh temperature reaches 180 degrees. Let rest 5 minutes before carving. Serve with garlic juices.
