Schnitzel

7 slices bread, cubed and crusts removed
2 eggs mixed with 2 T. oil
2 c. oil
1/2 c. flour
1 1/4 lb. pork tenderloin cut on angle into 4 cutlets and pounded to 1/4 to 1/8 inch thick.
Capers
Hard boiled egg, sieved
Microwave cubes for 4 minutes, stir and microwave for 4 more minutes until lightly browned. Process for 45 seconds in food processor.
Dredge cutlets in flour, then egg mix, then crumbs, pressing in crumbs. Let stand on wire rack for 5 minutes.
Heat oil to 375 degrees. Fry cutlets,not touching 1 to 2 minutes per side until golden.
Need 2 c. oil needed to ensure wrinkled crispy crust, puffing away from meat. Eggs and oil mix needed to trap moisture and creat puff also.
