Chicken Penne with Tomato Garlic Cream Sauce

1 lb. penne pasta
2 T. butter
1 onion, sliced
1/2 t. red pepper flakes
2 garlic cloves, minced
2 lb. Roma tomatoes, chopped (or 28 oz. can diced tomatoes, drained)
2 c. whipping cream or half and half
1 c. frozen peas
1/2 t. salt
pepper
2 lb. chicken, cooked and shredded
Prepare pasta according to directions until el dente. Drain, reserving 1/2 c. liquid.
Saute onion and red pepper in butter in skillet 3 minutes. Stir in garlic and cook 1 minute. Stir in tomatoes, cream and pasta liquid. Cook on high for 4 minutes until slightly reduced. Stir in peas, salt, pepper, pasta and chicken. Serve
Serves 6
