2 onions, chopped
8 garlic cloves, chopped
1/3 c. + 2 t salt
2 T pepper
1 T. cayenne
8 c. water
8 chicken breast halves, 8 drumsticks and 8 thighs, with skin and bones
10 c. flour
8 c. vegetable oil
Puree onions and garlic with 1/3 c. salt, 1 T. pepper, cayenne and 1 c. water. Pour into large bowl and add 7 c. water. Marinate chicken at least 12 hours.
Whisk flour, 2 t. salt, 1 T. pepper in large bowl. Drain and dry chicken and dredge chicken in flour mix, let set 20 minutes.
Preheat oven to 250 degrees. Line 2 large baking sheets with paper towel and set cooling rack on each. Heat 2 inches oil in large pot over moderately high heat until 365 degrees. Fry 4 pieces of light or dark meat, separately until golden brown 8 minutes for white and 12 minutes for dark. Transfer to rack and keep warm in oven. Fry remaining chicken, returning oil to 365 degrees between batches.
