Chicken Confetti Spaghetti Jackie Style

8 oz. pasta or 1/2 c. instant brown rice
4 T butter
16 oz. cooked, diced chicken
4 oz. diced pimentos
8 oz. each, onion, bell peppers, portabella and celery, diced
10.5 oz. cream of mushroom soup
salt and pepper to taste
Hungarian Paprika to taste
14 oz. chicken broth
1 1/2 c. sharp shredded cheese
2 c. panko
Preheat oven to 425. Make pasta according to instructions, until partially tender. Cut butter into small pieces to soften.
In fry pan, saute, onion, bell peppers, mushrooms and celery until tender crisp.. Add chicken, pimentos, soup, salt, pepper, broth and paprika. Heat until hot. Stir in pasta or 1/2 c. uncooked instant brown rice and transfer to 2 qt. baking dish.
Stir panko and cheese into butter, mix with fingers until crumbly. Sprinkle over chicken and bake 20 minutes until golden and bubbly. Let stand 5 minutes.
Serves 6
I didn't use spaghetti pasta to save on carbohydrates. I used instant brown rice to thicken mix.
