Chipotle Meatballs

1/3 c. milk
1/3 c. dried bread crumbs
6 slices bacon, diced
1/2 c. onion, finely chopped
1 T. garlic, minced
1 T. chipotle in adabo sauce, seeded and chopped
1 t. cumin
1 t. oregano
2 T. water
3/4 lb. ground pork
1/2 lb. ground veal
1 lg. egg, beaten
1/4 c. parsley, chopped
Stir milk and crumbs together in large bowl. Cook bacon until crisp and drain. Cook onion, garlic, chipotles, cumin and oregano until onion is softened, 3 minutes. Add water and cook until water evaporates, 1 minute. Stir into bread crumb mix then add meats, egg, parsley, bacon and 1 t. salt and mix well with hands.
Preheat broiler. Form scant tablespoons of meat mix into balls and thread 3 balls on skewer. Arrange on oiled broiler pan and broil 3 - 4 inches from heat until well browned and cooked through. Do not turn.
Serves 8
