Tony Fatso Dalmation Chicken Chili

1 lb. boneless, skinless chicken breasts, cubed
salt and pepper
2 onions, diced
2 stalks celery, diced
2 garlic cloves, minced
1 t. cumin
2 T. butter
1 can white corn, drained
3 c. chicken broth
1 T. chili powder
2 cans drained white beans, kidney, northern, navy, etc.
1 can black beans, drained
sour cream
shredded cheese
Preheat grill, skewer the chicken, season with salt and pepper. Grill for 8 minutes. Saute onion, celery, garlic and cumin in butter and add chicken. Stir in corn, broth, chili powder and bring to boil . Cover and simmer for 30 minutes. Add beans and simmer 30 minutes. Serve with sour cream and cheese. May want to add red pepper flakes to taste.
