1 lb. Italian sausage
1 medium onion, chopped
1 clove garlic, minced
1 c. sliced fresh mushrooms
1 pkg. frozen spinach, thawed and drained
1 lb. ricotta cheese
4 oz. cream cheese
2 c. shredded mozzarella cheese
2 eggs, beaten
2 t. fennel seeds
1/4 t. crushed dried chili peppers
1 pkg. frozen puff pastry, thawed
1 egg, beaten
Cook sausage, onion, garlic and mushrooms on meium heat. Drain off fat. Combine sausage mix, spinach, ricotta cheese, cream cheese, mozzarella cheese, 2 eggs, fennel and chili pepper until blended. Roll our half of pastry on floured surface. Line 9" square baking dish. Fill with sausage and cheese mix. Roll out remaining pastry and place on top of filling. Seal and flute edges of torte. Brush top with 1 beaten egg. Bake on Convection at 375 degrees for 45 - 50 minutes until light, golden brown.
Serves 9.
