Asian Coleslaw

Peanut Dressing
1/2 cup Italian dressing
2 tablespoons peanut butter
1 tablespoon soy sauce

Coleslaw
1 bag (16 ounces) coleslaw mix
1 can (11 ounces) mandarin orange segments, drained
1 small jicama (about 1 pound), peeled and cut into 1/2-inch cubes (2 cups)
1/2 cup peanuts

In small bowl, mix all dressing ingredients with wire whisk until smooth. In large bowl, toss coleslaw mix, orange segments and jicama. Toss with dressing. Sprinkle with peanuts
