Cheese-Topped Zucchini

3 medium zucchini squash
1 medium onion, thinly sliced
1 Tablespoon olive oil
1/2 to 1 teaspoon crushed oregano
1 (8 ounce) can tomato sauce
1 (6 or 8 ounce) package sliced Mozzarella cheese
Grated Parmesan cheese
Cut zucchini in half lengthwise. In a large skillet, cook
onion in hot oil until tender but not brown. Add zucchini
halves, cut side up, and sprinkle with salt, pepper and
oregano. Pour tomato sauce over. Cover and cook just
until tender about 10 minutes. Top zucchini with cheese
slices, cover and steam for 1/2 to 1 minute until cheese
has begun to melt. Pass Parmesan cheese at the table.
Makes 6 servings.
