Almond Florentines
12 large cookies
10 T. unsalted, high quality butter
1/2 C. plus 1 T. sugar
2 T. + 1 tsp. good honey
3 T. Heavy Cream
2 C. sliced almonda
1/2 C. old fashioned oats, NOT INSTANT
2 C. Choc. chips, best quality

pre-heat oven to 375 degrees
Combine butter, sugar, honey and cream in heavy saucepan and bring to a rolling boil over med. heat. Stir in almonds Boil for 3-4 minutes or until thick and smells of toasted almonds. Watch carefully!!
Let cool. Place on parchment lined cookie sheet. 2 TBLS. each
Cook for 12-15 minutess or until edges are just golden brown. Cool compleatly on rack and dip half of each in choc.
