Frying Pan Cookies

1/2 cup (1 stick) butter
1 cup sugar
1/2 teaspoon salt
2 eggs, beaten
1 cup chopped dates
1 cup walnut pieces
1 teaspoon vanilla extract
1 (4-oz) jar maraschino cherries, drained, cut into halves
2 cups crisp rice cereal
1 1/2 cups flaked coconut

Melt the butter in a skillet. Stir in the sugar and salt. Cook until
sugar is dissolved. Remove from the heat and let stand until cool.
Stir in the eggs. Add the dates, walnuts, vanilla and cherries. Cook
for 5 to 6 minutes or until thickened, stirring constantly. Remove
from the heat. Stir in the cereal. Shape into balls the size of
walnuts. Roll the balls in the coconut to coat.

Makes 2 - 3 dozen cookies
