Simple Italian Wedding Soup

1 cup onion chopped fine
2 garlic cloves, chopped
3 tbsp oil
4 oz. 3/4" meatballs
6 cups vegetable stock
1/2 medium carrot, grated
2 cups chopped spinach leaves
3 tbsp Grandine pasta
salt and pepper to taste
Grated Parmesan cheese to garnish
Saute the onion and garlic on medium for about 5 minutes, then add the meatballs, stir for about a minute, and add the vegetable stock. Add the spinach leaves, bring to boil and reduce heat to simmer. Add the carrots and simmer 10 minutes. Add salt and pepper. Add the pasta and raise the heat to medium-high for seven minutes, or until pasta is cooked.
Serve immediately, garnish with Parmesan cheese if desired.
Serves 4 - 6.
