Persimmon Puddings

My mom made these every year at Christmas time and gave them to friends, neighbors, teachers...even the mailman. I remember helping her crush the walnuts with a little crank driven walnut crusher. You'll love the hearty wintery flavor of these puddings. Just don't call them fruitcake!

2 cups persimmon pulp
2 cups of flour
2 cups sugar
1 teaspoon salt
2 teaspoons baking soda
3 teaspoons baking powder
1 teaspoon cinnamon
1 teaspoon ground cloves
1 egg
3 tablespoons oil
1 cup chopped dates
1 cup raisins
1 cup crushed walnuts
2 teaspoons vanilla

Preheat oven to 350 degrees
Mix persimmons, egg, oil, dates, raisins, walnuts and vanilla. In separate bowl mix flour, sugar, salt, baking soda, baking powder, cinnamon and cloves. Add persimmon mixture and beat thoroughly.
Spoon into paper cupcake forms.
Bake for 25-30 minutes
