Strawberry Pie

1 cup sugar
3 Tablespoons cornstarch
Red food coloring
1 teaspoon lemon juice
2 cups sliced fresh strawberries
1 baked 9-inch pie shell
Whipped cream

Mix the sugar and 1 cup water in a saucepan and bring to the boiling point.
Mix the cornstarch with a small amount of water and stir into the sugar mixture.
Cook until thick and clear, stirring constantly, and remove from heat.
Add several drops of red food coloring and lemon juice and -cool- thoroughly.
Stir in the strawberries and pour into pie shell.
Top with whipped cream and chill for 1 hour before serving.

Makes One 9-inch pie.
