3 Cheese Spinach Egg Casserole

- 3 cups shredded Cheddar cheese
- 3 cups shredded Mozzarella cheese
- 6 tablespoons flour
- 2 cups cottage cheese
- 1 medium onion, chopped
- 6 eggs, beaten
- 6 tablespoons margarine, melted
- 1 package (10 ounce size) frozen chopped spinach, thawed, completely drained
Preheat the oven to 350 degrees F. Grease a 7x12-inch baking dish. Combine the cheddar and mozzarella in a bowl. Gently stir to combine. Sprinkle the flour evenly over the cheese then stir well to incorporate. Stir in the cottage cheese until well mixed. Heat a nonstick skillet over medium heat. Spray with nonstick cooking spray or add a little oil the pan. Add the onion and cook, stirring, until softened. Add the sauteed onion, eggs, margarine, and drained spinach to the cheeses and stir well. Pour the mixture into the prepared pan and place in the oven. Bake, uncovered, for 60-80 minutes at 350 degrees F or until the cheese is bubbly and lightly browned on top. Cook's Notes: The cheddar and mozzarella add a little salty flavor to the dish but you may wish to add additional salt (and pepper) if desired.
