Baked Brussels Sprouts Au Gratin

- 1 quart Brussels sprouts
- 2 tablespoons butter
- 1/2 cup chopped green onion
- 1 slice bacon, chopped
- 1 tablespoon flour
- 1 1/2 teaspoon minced garlic
- 1 1/2 teaspoon minced fresh parsley
- 1/2 teaspoon salt
- 1/8 black pepper
- 1/2 cup grated Cheddar cheese
- 2 1/2 tablespoons breadcrumbs
Preheat oven 325 degrees F. Grease a baking dish. Rinse the brussels sprouts and trim off any tough or browned leaves. Cut an "x" in the bottom of the stem using a sharp knife. Place the brussels sprouts in a saucepan and add enough water to cover. Bring to a boil over medium-high heat. Reduce the temperature to a strong simmer. Let cook for 10 minutes or until tender. Drain off the water reserving 1 cup of the cooking liquid. Set aside. Add the butter to a skillet over medium heat. When melted, add the green onion and bacon and cook, stirring frequently, for 3 minutes. Add the flour to the skillet and mix well. Cook, stirring constantly, for 3 minutes. Add the garlic and parsley. Cook, stirring frequently, for 3 minutes. Add the reserved cooking water, salt, and pepper. Bring the liquid to a boil and cook, stirring constantly, until the sauce has thickened. Place the brussels sprouts in the prepared baking dish, stem side down. Gently pour the sauce over the sprouts. Evenly sprinkle with cheese then top with the breadcrumbs. Place the baking dish in the oven and bake at 325 degrees F for 30 minutes or until bubbly and the breadcrumbs are browned. Serve hot.
