Cider Grilled Pork Chops

- 1 1/2 cup apple cider
- 2 tablespoons honey
- 2 tablespoons soy sauce
- 2 tablespoons fresh lemon juice
- 1/2 teaspoon grated lemon zest
- 1/2 teaspoon dried sage
- 1 apple, peeled, cored and chopped
- 2 scallions, finely chopped
- 2 cloves garlic, minced
- 2 teaspoons minced fresh ginger
- 4 loin pork chops, 1-inch thick, trimmed of any fat
- 2 tablespoons cold butter
- salt and pepper, as desired
- 1 tablespoon melted butter
Combine the apple cider, honey, soy sauce, lemon juice, lemon zest, sage, chopped apple, green onions, garlic, and ginger in a bowl. Mix until the honey is dissolved. Place the pork chops in a zip-top plastic bag or a baking dish. Add the marinade and turn the meat to coat in the marinade. Refrigerate for 2-8 hours, turning the chops to coat in the marinade once or twice. Preheat the grill to medium-high heat. Drain the marinade from the chops into a saucepan. Bring to a boil and cook for 5-7 minutes or until it has reduced and thickened. Whisk in the cold butter, salt, and pepper. Keep the sauce warm. Brush both sides of the pork chops with the melted butter. Place on the hot grill and cook for 4-5 minutes per side or until cooked to desired doneness. Do not overcook the pork or it will be dry. Place the cooked pork chops on individual serving plates. Drizzle with the sauce and serve immediately.
