  • 1 pie crust shell

***Filling***

  • 1/2 cup sugar
  • 2 tablespoons all-purpose flour
  • 1/8 teaspoon salt
  • 1/4 teaspoon almond extract
  • 7 cups thinly sliced peeled apples

***Streusel***

  • 1/2 cup all-purpose flour
  • 1/2 cup packed brown sugar
  • 1/4 cup butter or margarine, cut into pieces
  • 1/2 cup sliced almonds

Heat oven to 425 degrees F. Make one pastry pie crust. Bake 4-5 minutes or until pastry is dry.

For Filling: In a large bowl, mix all filling ingredients except apples. Stir in apples until coated. Spoon into partially baked crust.

For Streusel: In a small bowl, mix all streusel ingredients, except almonds with a pastry blender or fork until crumbly. Sprinkle over apples.

Bake for 35-45 minutes, covering entire surface of pie with a sheet of foil for the last 15-20 minutes of baking to prevent excessive browning. Bake until apples are tender and juice is bubbly.

Sprinkle with almonds. Bake uncovered 2-3 minutes longer or until almonds are toasted. Cool completely before serving.
