  • 5 cups quick-cooking oatmeal
  • 1 cup brown sugar
  • 1 teaspoon salt
  • ground cinnamon, to taste
  • 1/2 cup chopped or whole nuts, (optional)
  • 1/2 cup raisins or other dried fruit (optional)

Combine the oatmeal, brown sugar, salt, cinnamon, nuts, and raisins in a bowl. Mix well. Transfer the instant oatmeal mixture to an airtight container.

To serve, pour the desired amount of oatmeal mix into a microwave-safe bowl. Add milk as desired and microwave on high heat for 30 seconds. Stir the oatmeal and microwave for 30 seconds or until the oatmeal is the desired consistency and temperature. Serve immediately.

You can use other dried fruit or chocolate chips in place of the nuts and raisins, if desired. You can substitute pumpkin pie spice or apple pie spice for the cinnamon (or other spices). The oatmeal will keep for up to 6 weeks, stored in an airtight container at room temperature.
