Balsamic Braised Pork Tenderloin

- 1 1/2 pound pork tenderloin
- 1/2 cup flour
- 1/2 teaspoon salt
- 1 tablespoon olive oil
- 1/4 teaspoon black pepper
- 2 tablespoons shallots, minced
- OR
- 1 small onion, minced
- 2 cloves garlic, minced
- 2/3 cup balsamic vinegar
- 1/2 cup chicken broth
- 1 teaspoon fresh sage, chopped
- 1 tablespoon fresh rosemary, chopped
- 1 teaspoon fresh thyme, chopped
Coat the tenderloin with flour, salt and pepper. Shake the excess off. In a skillet, heat the oil and when hot, brown the tenderloin on all sides. Add the shallots and garlic and cook for two minutes. Add the balsamic vinegar and chicken broth and bring to a simmer. Place the pan in a 350 degrees F oven and roast for 20 to 25 minutes, basting often, until the internal temperature is 150 degrees. Carefully remove the pan from the oven and sprinkle the herbs over and mix well. Slice the meat and drizzle the pan juices over it.
