- 6 cups milk
- 3/4 cup sugar
- 3/4 cup tapioca (small or large pearl)
- 1 egg
- 2 teaspoons vanilla extract
Set the crock pot to high heat. Add the milk and sugar and stir until the sugar has dissolved. Add the tapioca and mix well. Cover the crock pot and cook on high heat for about 2 hours or until the tapioca is tender. Large pearl tapioca may take longer to cook. The tapioca pearls will be translucent when cooked. When the tapioca is cooked, beat the egg and vanilla in a small bowl with a whisk. Add 1 cup of the hot tapioca to the eggs and stir quickly to combine. Add that mixture back to the crock pot and mix well. Cover the crock pot again and cook the tapioca for another 20 minutes or until thickened. Transfer the tapioca to a serving bowl or individual serving dishes. Place the tapioca in the refrigerator and chill for 2-3 hours.
